According to me filtering is utilised for improving and changing the input picture. With the help of filters, you can remove a few features in an image or reduce image noise. Some popular techniques are median filtering, linear filtering, and Wiener filtering.
I don’t know much about edge detection. Maybe you can check some popular sites on image processing.

Edge detection is utilised to segment images and extract data. This method, by identifying discontinuities in brightness,
allows you to find beneficial & meaningful edges of objects in processed images.Sobel edge detection is one of the most popular edge detection techniques.

In addition to filtering and edge detection other techniques that solve image processing tasks such as self-organise maps, wavelets technique, etc.
